I don't know about you, but this Quick Instant Pot Tamale Pie sounds like something I could HAPPILY make every night of my life. Seriously, Tamales are life and I just dig the ease of this recipe.

Ingredients

  • 2 14 oz. cans chili (no beans)
  • 6 frozen tamales
  • 1/2 C of onion, chopped
  • 2 C corn chips, crushed
  • 1 C cheddar cheese, shredded
  • 1 C chicken broth

Instructions

  1. Spread the chili con carne and chicken broth over the bottom of the Instant Pot.
  2. Lay the tamales over the chili.
  3. Top with onions.
  4. Scatter the crushed chips over the onions.
  5. Spread the cheese over the top.
  6. Set Instant Pot to High Pressure and cook for 10 minutes.
  7. Quick release.

Notes

This dish also tastes great using crushed nacho chips instead of the corn chips. Trying adding a Mexican cheese blend to add a little more spice to this dish.
