For real, I am totally nostalgic for the cafeteria lady lunches I had as a kid.

There was this specific cafeteria lady that just was so super sweet–all her kids had grown up and moved away and so she treated us like her grandkids.

And I didn’t eat lunchline often–had a deal with my mom that I could keep the money if I packed my lunch. LOL!

But on salsbury steak day…dude. Eff the chance at $2…I was buying my lunch.

And I even remember having the convo with the lunch lady about how much I loved it–and could I make it at home.

She just laughed. And then told me I sure could when I got older. LOL!

So, for 9-year-old me, this is Instant Pot Salsbury Steak.

The culmination of almost a lifetime of love.

So you know this Instant Pot Salsbury Steak is the shit.

Like my kids will not have to spend THEIR $2–I’ll just whip up some Instant Pot Salsbury Steak and they’ll be able to still have their favorite soulfood anytime.

Of course, they’ll probably be sick of it and the school will probably serve something infinitely better (in my kid’s opinion), but come on. Heh.

Instant Pot Salsbury Steak

Instant Pot Salsbury Steak

The cafeteria lady said I could make this when I got older--so I did. She was totally cool, and she's totally the inspiration for this Instant Pot Salsbury Steak. And my belly couldn't be happier.

Servings 8

Ingredients

  • 2 pounds lean ground beef
  • 1 envelope dry onion soup mix
  • 1/2 cup seasoned bread crumbs
  • 1/4 cup milk
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 2 cans cream of chicken soup
  • 1 packet dry au jus mix
  • 3/4 cup water

Instructions

  1. Combine the ground beef, onion soup mix, bread crumbs and milk in a large bow.
  2. Mix the meat and other items together with your hands and form 8 patties.
  3. Heat the oil in the bottom of the Instant Pot on saute.
  4. Dredge the patties in the flour and brown them on each side in the Instant Pot.
  5. Remove the patties from the Instant Pot and set aside.
  6. Deglaze the Instant Pot with the water.
  7. Place the patties back into the Instant Pot. You can stack them if needed to get all 8 in there.
  8. Mix the remaining ingredients in a bowl and pour over the meat.
  9. Set the Instant Pot to High Pressure and cook for 15 minutes.
  10. Serve over rice, mashed potatoes or noodles.
