Instant Pot White Chili

Look. Sometimes you just need a solid, home-cooked meal from mom. And this Instant Pot White Chili will do that--on so many awesome homemade, comfy levels. You're seriously going to need this comfort food.

Ingredients

1 lbs ground chicken
1 small onion, minced
2 cloves garlic, minced
2 tblspn olive oil
1 can hominy, do not drain
1 can Great Northern Beans, do not drain
1 can corn, do not drain
1 can diced chilis, optional
2 tblspn homemade taco seasoning, or 1 packet store-bought

Instructions

On the sautee setting, place olive oil, onion, garlic, and ground chicken.
Brown the chicken mixture until the onions are translucent (don’t worry about the chicken, just the onions--really, the point is just to break-up the chicken enough that it’s not a block).
Add all other ingredients.
Close Instant Pot and set to High Pressure, cook for 8 minutes.
Quick release.
