Because my family hates the “L” word, so I have to disguise meals…

(Inside: My kids and husband all eat like birds, dammit. And they hate leftovers. So, I came up with this rockin’ recipe for Instant Pot Leftover Beef Stew. For when I have beef on the brain and they are none the wiser.)

Braaaaaains…braaaaaiiiiins…that’s what I feel like I need when I cook in the instant pot. Because every time, I end up cooking for an army. And I got no army to feed.

Good thing my Instant Pot Leftover Beef Stew knows what to do with all that extra beefy goodness from all that roast I made last week. (Who knew a family of 4 wouldn’t eat 67 lbs of roast?!)

Your husband is kinda snooty about leftovers. Thus your children are super-snooty about the dreaded “L” word.

So, you have to come up with clever ways to disguise your “L” word meals.

Because My-Little-Pony-forbid that we eat Pot Roast two nights in a row!

This recipe is perfect for leftover roast, Philly Cheese Steak and Swiss steak. You got too much meat? This pot recipe's for you.

Ingredients

  • Leftover roast, Philly cheese steak, Swiss steak or any beef entrees
  • 1 bag of baby carrots or 2 large carrots cut into chunks
  • ¼ lb. cut green beans or 1 can green beans
  • 1 medium onion quartered
  • 2 large potatoes cut into large chunks
  • 1 large stalk of celery sliced
  • 2 cups water

Instructions

  1. Place leftover and all ingredients in pot. Set to stew.
  2. Natural release
