I have a confession to make: I love Mexican food.

The chips, the salsa, the tacos, taquitos and enchiladas.

Dude, I sincerely love Mexican food.

I mean, I even made Tamale Pie in the Instant Pot the other day (it was killer by the way).

So, naturally, I needed to make Instant Pot Breakfast Burrito Filling.

Because, obviously, if I can’t get enough Mexican in my life with lunch and dinner, then breakfast has to get it’s lazy tukus in on the party, too.

I mean, for real.

Ok. Maybe not the coolest thing–but pretty darn cool.

Whatever. That’s like one of the least important things when considering the great and vast greatness that is Instant Pot Breakfast Burrito Filling.

Cooking breakfast for a ton of people and you want them full and happy by 10am? This is the recipe for you.

Seriously. Because people can customize it, it takes about 15 minutes from opening the fridge to placing everything on the table.

No reason why we shouldn't enjoy the ease of cooking breakfast in the instant pot. Seriously! Let's break out an instant pot breakfast recipe with this Instant Pot Breakfast Burrito Filling. All you need is 15 minutes and some tortillas.

Ingredients

  • 1 15 oz can black beans, drained and rinsed
  • 1 10 oz can diced tomatoes with green chiles
  • 1 cup uncooked pearl barley
  • 2 cups broth or water
  • 3/4 cups frozen corn
  • 1/4 cup chopped green onions1 teaspoon ground cumin
  • 3 garlic cloves, chopped
  • 1 teaspoon chili powder, optional
  • 6 large eggs
  • 1 tbspn butter
  • 6 flour tortillas

Instructions

  1. Combine all ingredients except for the eggs and butter in the Instant Pot (and of course not the flour tortillas--that’s for later).
  2. In a silicone mini loaf pan, crack eggs and stir vigorously with a fork to mix.
  3. Add butter to eggs.
  4. Place mini loaf pan on top of the other ingredients in the Instant Pot.
  5. Turn Instant Pot onto High Pressure and cook for 12 minutes.
  6. Quick release.
  7. Layer eggs and the other filling in the flour tortillas, along with salsa and cheese or anything else you like in your burritos.
