It turns out that one of the easiest things to make in the Instant Pot, much like the crockpot, is soups.
Not saying it’s the only thing you can make–and certainly not the wildest, but soups really do a great job of being a weeknight meal you just can’t say “no” to.
Seriously. I love this recipe for Instant Pot Corn Chowder because it’s just so darn fast.
Literally a dump-and-run recipe.
My mom decided to come oven to the house for lunch the other day–with about 15 minutes notice.
I was able to have a bowl of this on the table within just a minute or two of her walking through the door. Really just long enough for her to say hello to the kids and get a drink.
Perfect timing.
Then there were leftovers for dinner–which made my day because it went downhill after lunch…LOL!
I mean, for real downhill. Two poopy diapers in that many hours, both of which required outfit changes, a hungry toddler who decided to try grass for a snack, two mud puddles, and a pile of ants.
Needless to say, I feel like we’ll never go outside again.
I was just relieved when the husband rang and said he was on his way home. LOL!

Instant Pot Corn Chowder

Ingredients
- 1 cup frozen hash browns with peppers and onions
- 1 cup cooked ham, diced
- 1 pkg, 10 oz frozen corn
- 1 can, 10 oz cream of mushroom soup
- 2 to 2 1/2 cups milk
- salt and pepper to taste
Instructions
- Put all ingredients in Instant Pot and stir to combine.
- Set heat to High Pressure and cook for 10 minutes.
- Quick release.
- Serve and party on!
