No reason why we shouldn't enjoy the ease of cooking breakfast in the instant pot. Seriously! Let's break out an instant pot breakfast recipe with this Instant Pot Breakfast Burrito Filling. All you need is 15 minutes and some tortillas.

Ingredients
1 15ozcan black beansdrained and rinsed
1 10ozcan diced tomatoes with green chiles
1cupuncooked pearl barley
2cupsbroth or water
3/4cupsfrozen corn
1/4cupchopped green onions1 teaspoon ground cumin
3garlic cloveschopped
1teaspoonchili powderoptional
6large eggs
1tbspn butter
6flour tortillas
Instructions
Combine all ingredients except for the eggs and butter in the Instant Pot (and of course not the flour tortillas--that’s for later).
In a silicone mini loaf pan, crack eggs and stir vigorously with a fork to mix.
Add butter to eggs.
Place mini loaf pan on top of the other ingredients in the Instant Pot.
Turn Instant Pot onto High Pressure and cook for 12 minutes.
Quick release.
Layer eggs and the other filling in the flour tortillas, along with salsa and cheese or anything else you like in your burritos.
