Instant Pot Cajun Red Beans and Rice

Oooh, weee, cherie...it's gettin' hot--ok, I'll stop. It's getting very bayou up in my house lately--and we've had a little Instant Pot Cajun Red Beans and Rice as a dinner a couple times this month. 

Servings 6 people


  • 1 lb. dried red beans rinsed and drained well
  • 2 tbsp oil
  • 3 celery stalks chopped
  • 1 onion chopped
  • 1 green bell pepper seeded and chopped
  • 3 scallions chopped
  • 2 garlic cloves minced
  • 2 2/3 C of beef broth
  • 2 cups water
  • 1/2 tsp crushed red hot peppers
  • 1 ½ lbs sausage 1 package, sliced
  • 4 C of hot cooked rice


  1. Place the oil into Instant Pot and add the celery, onions, bell pepper, scallions and garlic on saute. Stirring often, cook the mixture until the onion is translucent.
  2. Deglaze the Instant Pot using ⅔ cup beef broth.
  3. Add the beans and stir to blend in. Add remaining broth and water. Add the crushed peppers and stir to blend all the ingredients together. Bury sausage slices in the beans.
  4. Turn Instant Pot on to High Pressure and cook for 25 minutes.
  5. Natural release.
  6. Serve the beans over the hot cooked rice.
