Instant Pot Chicken Alfredo Fettuccini

The easiest Italian dish I think I've ever made. Yet one of the most flavorful, too. This Instant Pot Chicken Alfredo Fettuccini is an obsession of mine. I hope I can be buried with a plate of it when I die.

  • 1 lb. boneless chicken breast cut into 1-inch wide strips
  • 1 pack dry Italian seasoning
  • ¾ cup water
  • 1 ½ cup fetuccini noodles
  • Water
  • 1 tbsp. olive oil
  • ½ jar alfredo sauce
  • 1 stainless steel inner pot for cooking pasta

  1. Put ¾ cup water into pot with steamer rack. Set to sauté to bring the water to a boil.
  2. While waiting for water to boil, sprinkle Italian seasoning over chicken breast.

  3. Place chicken on rack. It’s ok to stack the chicken pieces on top of each other.
  4. Cancel sauté mode.
  5. In the inner pot, place fetuccini. Add olive oil and just enough water to cover pasta and about ¼ inch over top. Stir.

  6. Place inner pot on top of chicken. Set pot to cook on high pressure for 8 minutes.
  7. Quick release.
  8. Add the freaking magic alfredo sauce to chicken. Mix well.

  9. Place chicken on top of fettuccini.

  10. Serve and party on!

Recipe Notes

Optional: In a baking dish, add chicken to fettuccini, mix well, cover with mozzarella cheese and pop into oven to brown top.
